Overview
An Evoker is a hostile mob: it will attack players on sight whenever it is able to reach them.
You will normally come across evokers in the Overworld, where they appear in Woodland Mansion and Villages (during raids).
In practice you will recognise it quickly, because summons Vexes and casts fang attacks (line of snapping jaws from the ground).
It carries 24 health points, 12 hearts, and yields 10 experience when it dies.
The Evoker has been part of the game since version 1.11.
One thing worth knowing: One of the most valuable mob drops in the game.
Knowing how the Evoker behaves is mostly about survival: recognising it early and reacting correctly is what keeps a night-time excursion from ending in a respawn.
Damage by Difficulty
Spawning
Evokers spawn in Woodland Mansion and Villages (during raids).
Spawns in Woodland Mansions and during raids (wave 5+).
Left alone far from any player, wild evokers eventually despawn, so use a name tag if you want a specific one to stick around.
Farming evokers is not a matter of a dark platform: it is the spawn rule above that a farm has to reproduce.
Woodland Mansion
Villages (during raids)Another mob's spawn rule points back at it: the ravager, sometimes ridden by Pillagers, Vindicators, or Evokers and the vex, summoned by Evokers during combat.
Drops
Here is what you can expect to collect from an Evoker:
Every kill yields 1 Totem Of Undying.
On top of that, you may come away with 1 Emerald.
In terms of experience, each kill is worth 10 XP orbs.
These are well worth keeping. Always drops a Totem of Undying, which saves the holder from death once.
The Looting enchantment on your sword raises the quantity and, for many of these items, the drop chance of the rarer rolls, so it is well worth using when you grind this mob.
Across many kills the guaranteed items pile up steadily while the chance-based extras trickle in, so consistent farming is the way to build a meaningful stockpile.

It is not the only source of Emerald: the vindicator drops 0 to 1.

Where the Evoker lands, it has company: the villager on the same 0.5 movement speed.
Evoker: 1 item per kill over 1 drop row
An evoker averages 1 Totem Of Undying a kill on the rolls Minecraft Java 26.2 makes for it, before Looting, which puts a full stack of 64 Totem Of Undying at 64 kills. Next down is Emerald at 0.5 a kill, which is 128 evoker kills to 64. 1 of those 2 rows (Emerald) only roll when a player lands the killing blow, so an evoker killed by a fall or another mob averages 1 item instead of 1.5.

Coming the other way, an evoker hit is 30% of a player's 20 health, 4 of them a full bar, all out of the evoker's 6 damage on Normal. On Easy the same evoker hit is 20%, on Hard 45%, so 5 hits against 3.
Behavior & Combat
Summons Vexes and casts fang attacks (line of snapping jaws from the ground). Transforms blue sheep into red sheep.
It notices a target from 12 blocks, 86th of 88 for follow range, with the cow its nearest at 16.
It can hit you for 4 on Easy, 6 on Normal and 9 on Hard, while its own 24 health (12 hearts) determines how many blows it takes to kill.
The fastest way to win is to lean on what it fears: Melee rush (prevent spellcasting) and Ranged attacks.
Since it can attack from range, closing the distance quickly or breaking line of sight with cover is often safer than trading hits at a distance.
The practical takeaway is to respect its strengths, exploit the weaknesses listed above, and you will rarely lose a fight you choose to take.

Evoker farm
There is no platform that produces evokers. Spawns in Woodland Mansions and during raids (wave 5+). Anything you build has to feed that source instead of a dark floor.
Each kill is worth 10 experience and up to 1 totem of undying, so the size of the evoker farm follows the number you need of that one item.
Evoker version history
The evoker was added in Minecraft 1.11, which came out on 14 November 2016, so the evoker has been in the game for 9 years.
3 other mobs here came with it: the llama, the vex and the vindicator. That puts the evoker behind 42 of the 88 mobs here and ahead of 42.
All of the evoker data above is taken from Java 26.2, so it describes the evoker as it is today.
