Overview
The Sulfur Cube is a hostile mob in Minecraft, which means it will attack players on sight whenever it is able to reach them.
You will normally come across sulfur cubes in the Overworld, where they appear in Sulfur Caves.
What sets it apart is its behaviour: hops after you and splits into two smaller cubes when it dies, and a cube that has already been split does not split again.
With 1 to 4 HP (0.5 to 2 hearts) on its bar, killing one rewards 0 to 2 experience.
It was first added in 26.2 and has been a fixture of Minecraft ever since.
Knowing how the Sulfur Cube behaves is mostly about survival: recognising it early and reacting correctly is what keeps a night-time excursion from ending in a respawn.

Natural spawns for the Sulfur Cube occur in Sulfur Caves.
That single-biome restriction means Sulfur Caves is the only place to look; if you are not there, you will not find one, so locating the biome is the real task.

A Sulfur Cube farm is built around its own spawn rule rather than around the light level, so start from what makes them appear at all.
Where the Sulfur Cube spawns
Sulfur Caves is where it stands strongest: weight 100 on the monster list and 32.2% of it, arriving 2 to 4 at a time. There it shares the list with Creeper at 50, Skeleton at 50, Zombie at 50, Slime at 25 and Cave Spider at 20 and 3 more, 311 weight together, of which 100 is sulfur cube. That is the whole list.

Drops
When killed, the Sulfur Cube drops no items at all; its only reward is experience.
Because there is nothing to harvest from its corpse, the reason to engage a Sulfur Cube is almost always the experience or simply clearing it out of the way, not farming a resource.
If you are after specific items, the Sulfur Cube is not your source for them; look to mobs with populated drop tables or to mining and trading instead.
You also collect 0 to 2 experience for every Sulfur Cube you defeat.
Since there is nothing to pick up, you do not need to worry about a hopper or collection system for sulfur cubes; they leave the ground exactly as they found it.
The game rolls nothing for it when it dies, so it leaves nothing behind at all.

Its health is not fixed: health is the size multiplied by itself, and a sulfur cube spawns at size 2 and leaves size 1 behind when it splits.

On the receiving end a sulfur cube takes 15% off a player's 20 health per hit, so 7 of them land the kill; that share is the sulfur cube's 3 damage on Normal. On Easy the same sulfur cube hit is 10%, on Hard 20%, so 10 hits against 5.
Behavior & Combat
Hops after you and splits into two smaller cubes when it dies, and a cube that has already been split does not split again. Fire is the part to watch, because a lit cube goes off instead of splitting.
On the offensive it deals 2 on Easy, 3 on Normal and 4 on Hard, and you will need to chew through 1 to 4 health (0.5 to 2 hearts) to bring one down.
When fighting back, remember it is weak to Water and Being cut down to its smallest size.
The practical takeaway is to respect its strengths, exploit the weaknesses listed above, and you will rarely lose a fight you choose to take.
